Carne Asada

Carne Asada is a Mexican recipe for marinated, grilled beef served in in tortillas. This is not your run of the mill taco. This is a flavorful and delicious meal that is great for any occasion.
Prep Time: 30 minutes
Cook Time: 12 minutes
Total Time: 42 minutes
Yield: Serves 6 to 8


Ingredients:
 
- 2 pounds of our flat iron steaks
- 12 tortillas
- 1/2 cup of tequila
- 1/4 cup lime juice
- 1/4 cup of lemon juice
- 1/4 cup of orange juice
- 4 cloves of garlic crushed
- 1 medium onion chopped
- 2 teaspoons black pepper
- 1/2 teaspoons of salt
- 1 cup salsa
- 1 cup guacamole
- 2 teaspoons of Tabasco®
Mix juices, garlic, onion, tequila, Tabasco®, salt and pepper in a bowl. Add meat and marinate both sides. Cover and refrigerate, turning meat over occasionally. Let steak marinade for 6 to 8 hours. Preheat grill. Place a few drops of water on each tortilla, stack and wrap in aluminum foil. Place on grill. Remove meat from marinade, reserving marinade. Place on grill. Turn steak and tortillas once during cooking. Brush steak with remaining marinade. Cook to your liking (12 to 15 minutes for medium-rare). Cut into thin slices. Place a few slices of steak on each tortilla with salsa and guacamole and serve. 

                                             

Beer-Marinated Peppered T-Bones

Our Beer-Marinated Peppered T-Bones are slightly spicy, and is a sure-fire hit for a Fathers Day cookout.

Cook Time: 4 hours 8 minutes
Total Time: 4 hours 23 minutes
Yields: Serves 6




Ingriedients:
 - 3/4 cup beer 
 - 1 cup  chopped onion
 - 3/4 cup  chili sauce
 - 1/4 cup  parsley
 - 3 tablespoons  Dijon-style mustard
 - 1 tablespoon  worcestershire sauce
 - 2 teaspoons  brown sugar
 - 1/2 teaspoon  paprika
 - 1/2 teaspoon  ground black pepper
 - 3 of our 16 oz. T-bones
 - 1 to 1-1/2 teaspoons  cracked black pepper
 - Fresh herbs (optional)
    In a large glass baking dish combine onion, beer, chili sauce, parsley, mustard, Worcestershire sauce, brown sugar, paprika, and the 1/2 teaspoon pepper. Place steaks in marinade. Cover and refrigerate 4 to 6 hours or overnight, turning steaks over occasionally. Remove steaks from marinade; discard marinade. Sprinkle both sides of steaks with the cracked black pepper.Grill steaks on an uncovered grill directly over medium-hot coals for 5 minutes. Turn and grill to desired doneness, allowing 7 to 10 minutes more for medium (160 degrees F) doneness. If desired, garnish with fresh herbs. Serves 6.
